
If you´ve been following my Allaboutyum post, you would have recalled my post when we dropped by Dirk´s place for dinner. Though I had missed capturing a photo of what Dirk had baked for us that afternoon, the simple butter cake with cream frosting were still fresh in my mind. The cake was rustic in style but yet, crusty on the outside and soft on the inner. He baked them to perfection with evenly raised height (which unfortunately Mua, had not mastered till now), and as how temptation gets, the cake was on my mind day in day out upon returning and I decided to give it a go one fine day. It was a rather straightforward basic cake recipe I had in hand, and I know that I had to LUX it up by adding something. A little something that make my toes curl.
Andddd ... Baileys always does it for me. I love having them infront of telly whenever the evening´s too chilly. I love having them when I needed something comforting. And the taste ... as good as it looks! This is a keeper.
Here`s the Basic Cake Recipe
- 200 grams flour
- 200 grams sugar
- 200 grams butter
- 4 eggs
- 1 tablespoon baking powder
- 100 grams cream
- 80 grams icing sugar
- 2 tablespoon Baileys
- Icing sugar for dusting
- Cream the butter and sugar together until pale and fluffy.
- Mix in egg(s) than fold in the flour and baking powder.
- Lightly butter the 8 inch round baking pan and pour batter in.
- Bake for about 20 minutes at 180C. Insert a toothpick in to test if cake is fully baked. Otherwise, give it another 5 minutes.
- Once cake cools down, slice the cake into half.
- Beat cream at full speed until it turns fluffy and light.
- Add sugar in and mix for another minute.
- Lastly, pour Baileys in and mix them gentle by hand. Spread them onto the cake´s bottom layer before covering them with the top layer.
- Before serving, sprinkle some icing sugar on top.
