Angel Hair Pasta with Portobello and Truffle Oil

After having feasted local food since I got back from Singapore, my tastebud is drumming for some adventure again.

Coincidently, tonight is the night where a few food bloggers will get together for a potluck hence it is a good reason to do a trial run of some dishes I'm going to bring over first.

I've bought some milk last night and though of making a cream sauce with the portobello mushroom I'd picked up, but somehow, I wanted to try the roasted mushroom version with the angel hair pasta. I'm happy to report that, it turned out well. The pasta, as I've always like it was perfectly al-dente and the portobello flavour together with my truffle oil drizzle, brought our a nice, woody flavour and smell.

Here's the recipe.
  • Angel hair pasta, cooked till al-dente with a bit of salt
  • 3 small portobello mushroom, wiped clean and sliced
  • 3 tablespoon olive oil
  • 2 clove of garlic, chopped
  • A pinch of salt and pepper
  • Chopped italian parsley
  • 2-3 drops of truffle oil

Method

  1. Pre-heat oven to a medium heat.
  2. Spread portobello mushroom on a roasting tray before sprinkling them over with chopped garlic.
  3. Drizzle them with olive oil, and season them with a pinch of salt and pepper before placing them into the oven to roast for about 10 minutes.
  4. When mushroom is ready, pour them over the ready pasta. Season the pasta with a pinch of salt and pepper, and lastly, garnish them with italian parsley.
  5. Lastly, drizzle them over with some drops of truffle oil. Serve.

I was thinking of doing this since it was just my mom and i at home...and pretty much thought of the same recipe as you (minus the parsley)...and yeah the parsley gave it a nice kick, cuz if not it woulda been too much oil and like heavy.

Just discovered ur blog and must say ur perty amazin and i think i might start 1 up with u as inspiration hehe
