
This is an easy-peasy assembling dish that sounds a bit odd, but taste fabulous. I've received praises for this simple creation in the past, and I hope (ahem), the food bloggers loved it too.
Here's the recipe.
- A medium size canned sardine
- 2 medium sized mango, peeled and cubed into 1/2 inches
- 1 slice of honeydew, cubed into 1/2 inches
- 3 tablespoon mayonaise
- 20 pieces of round japanese rice cracker (plain or seaweed)
- For garnishing, a bit of chopped chili, red onions and parsley is needed

Method
- To make the fruit mayo spread, place mayo, mango and honeydew in a bowl and mix them well. Set aside.
- Remove bones from sardine. Mash the sardine flesh up with the sauces until it is all well mixed. Set aside.
- When it is time to serve, assemble the fruit mayo at the bottom, followed by the sardine spread and lastly the garnishing.
- Serve them immediately so that the japanese cracker will NOT get soggy.
